Add automation
It would be very nice to have an API so that we could automatically enter payments (and similar) as our customers enter them into our system.

I found https://www.clarityaccounting.com/api-docs/index.php/tag/samples/ - and note from https://www.kashoo.com/api-docs/ that you recommend the use of soapUI to interact with Kashoo. How about a demo soapUI project profile and a few examples to get us going?
